Boerenkaas
A farmhouse cheese from Belgium, made from unpasteurized cow’s milk. Very similar to a gouda, Boerenkaas is aged for two years contributing to its nutty flavor that will continue to develop and a beautiful creamy texture. This cheese pairs well with a variety of our wines, particularly the Napa Valley Sauvignon Blanc.
Cave Aged Gruyere
An extra-mature cow’s milk cheese from Switzerland, this particular gruyere is nutty in flavor and displays a very pleasing creamy texture. A wonderful melting quality, gruyere is classically used in croquet monsieur and is an excellent complement to a majority of our red wines.
Delice de Bourgogne
This decadent triple cream made in Burgundy, France, is incredibly rich, full flavored with a smooth melt-in-the-mouth texture. The rind is yellowish-white with a soft-delicate fluffy white mould coat and invoking aroma. The aroma can be pungent but is a wonderful contrast to the buttery-sweet interior with its subtle taste. The flavor is rich buttery-sweet with a slight sour note on the finishing palate.
Fiscalini Extra-Mature Bandage Wrapped Cheddar
Based in Modesto, Ca, Fiscalini is making true farmhouse cheddars from California cow’s milk. Fiscalini is a truly sustainable operation that is making their cheese in a 100 year old dairy. Straw-colored in appearance, with a firm, crumbly texture that becomes creamy as it warms; this extra-mature cheddar has a subtle sharp note with a slightly smoky and nutty flavor.
