With only 500 acres planted to vine, grapes from the hailed Diamond Mountain appellation are in high demand. South-facing exposures in light, volcanic ash soils provide a rare opportunity to cultivate truly distinctive fruit. The 2006 Diamond Mountain Cabernet Sauvignon was vinified through both traditional and avant-garde techniques: hand-sorting of clusters, pre-fermentation cold soak, native yeast and malolactic fermentations, aging in French oak cooperage, and unfiltered bottling.
Our 2006 HALL "Diamond Mountain District" Cabernet Sauvignon is brimming with aromas of cocoa butter, black cherry syrup, roasted coconut and spicy smoke. The palate is silky and seductive yet powerfully concentrated with layers of dark spice, dark chocolate and ripe berries around a focused core. The wine’s suppleness and lush texture invite early drinkability, but its sheer concentration will permit 10-15 years of cellaring.
