Orange Spiced Glazed Carrots


Serves 6  

INGREDIENTS 
1 lb baby carrots
½ cup butter
¼ tsp. salt
4 tbsp. sugar
½ tsp. cinnamon
1 tsp. ground ginger
Zest from 1 lemon
1 cup orange juice
3 tsp. flour
2 cups water
Parsley (optional)

METHOD
Melt butter in a pan over low heat. Add carrots and cook for 3 minutes, then add sugar, salt, spices, orange juice and flour. Next, add the water, cover and cook for about 20 minutes. Garnish with lemon zest and parsley.
