 HALL Presents Seasonal Napa Valley Recipes from Local Pairings Chef Emily Buller


Sweet Potatoe Fries


Serves 6

INGREDIENTS 
4 medium sweet potatoes, peeled
3 ½ tbsp olive oil
2 tbsp. brown sugar
1 tsp. salt
1 tsp. pepper
2 tbsp. fresh chives, chopped

METHOD
Preheat oven to 450 degrees. Cut the sweet potatoes in have, lengthwise and cut each half into 3 long spears. Place on sheet pan and sprinkle with olive oil. Mix brown sugar, salt and pepper and sprinkle onto potatoes. Bake for 15-20 minutes and turn over fries to bake another 5-10 minutes until lightly brown. Add salt and fresh ground pepper to taste and garnish with chives.
