Lamb Sliders with goat cheese, dried tomato, mint and cilantro pesto

Serves 4 | Prep time 45 min. | Cook time approx. 2 hours
This dish goes perfectly with our HALL Napa Valley Merlot 

INGREDIENTS:

LAMB PATTIES
1 LB. GROUND LAMB
DRIED TOMATOES
1 LB. PLUM TOMATOES, BLANCHED, PEELED, CORED AND HALVED.

PESTO
½ C. MINT LEAVES
½ C. CILANTRO LEAVES
1 T. GARLIC, MINCED
2 T. TOASTED ALMONDS
¼ C. + 2T OLIVE OIL

SALT AND PEPPER TO TASTE
4 OZ. FRESH GOAT CHEESE
SLIDER ROLLS

DIRECTIONS:

  1. DRIED TOMATOES: Preheat oven to 225°. Lightly coat tomato halves in 2 T olive and 1 t salt. Place on a cookie sheet and slowly roast in oven until tomatoes are dried, approximately 90 minutes.
  2. PESTO: In a food processor, blend cilantro, mint, almonds, garlic and remaining olive oil. Season with salt and pepper.
  3. LAMB PATTIES: Preheat grill over high heat. Form lamb into 8 patties, season with salt and pepper and grill patties for 2 minutes per side or until medium rare.
  4. FINISH AND SERVE: Place patties on slider roll and garnish with goat cheese, pesto and dried tomato.
