Our 2021 Ellie’s Cabernet Sauvignon is characteristically effusive with lifted aromas of blackberry, black olive, and a hint of sassafras. The palate is dense and opulent in feel, loaded with a well-knit tannin structure that drives its unctuous texture. Blackberry, cassis, violet, and subtle alder notes dominate the flavor profile. The finish is long and smooth, with supple tannin and fresh acidity.

This wine is named for Craig Hall's mother, Eleanor “Ellie” Hall, who was an artist and a teacher. She inspired Craig’s love of art and it is her artwork that graces this wine’s label. Crafting this blend is an exercise in texture. Vineyard sources are selected for their elegance with tannins that are soft, lush, opulent and feminine in character. The palate is driven by minerality, cassis, and a floral perfume.

Vintage Notes | The alluring 2021 vintage is notable for its low yields, which resulted in an extra degree of concentration in our wines. In a second year of severe drought, the vines grew quickly in the warm spring weather while our team carefully managed irrigation block by block. By summer, the vines had set a lighter than average crop, and cooler weather in August allowed time for multiple vineyard passes to finetune the fruit load and manage the canopy. After a smooth harvest season, we are excited about the beautifully balanced, flavor-packed 2021's. |
